Lenten Treats

 

It is said that Cebuanos can never survive without food. In fact, food is present in almost all types of Cebuano activities. Even during the season of Lent, when people are supposedly fasting, Cebuanos still love to prepare food. According to my grandmother, her old folks have been preparing Lenten treats even before she was born. So, who are we to question this age-old (and very, very yummy) tradition? Hehehe.

I discovered a pretty interesting fact recently. According to one forumer who is from Leyte, the practice of cooking Binignit and Biko is not very popular in his hometown. And he was quite shocked to find out that almost all households in Cebu were preparing these delicious treats last Friday. Uniquely Cebuano diay ni nga tradition? I didn’t know. Hehehe.

Biko is sticky rice mixed with sugar and ginger.

Sugar is cooked until it becomes sticky.

This is called latik.

 When it’s sticky enough, it is added to the semi-cooked sticky rice.

After mixing, the mixture is  once again cooked (until the rice is fully cooked).

  1. wow!yummy,my lola also used to coocked binignit and biko during lenten season,i think its a tradition for us christians to prepare this kind of foods during lenten and its passing through every generation…maybe because it is our way of fasting…heheh!because we are not allowed to eat meat during lenten!mag fasting unta pro busog diay to sa binignit ug biko!hahah!

    Yes, how true it is that in our tradition, fasting means no meat, but abundant in biko & binignit! Hahaha!!! I ate a lot of it when I visited there last Jan.’08. It was delicious! I miss both delicacies!Yum…! Thanks, Ley!

  4. very yummy have not have binignit in my life for such a long, long, long, long time….. missed all the pinoy foods! that’s why the last time i went back home instead of going straight to the house from the airport our first stop over was the CNT lechon place accross SM….. LOL

  5. Being a full-blodied Cebuano, I taught my wife (filipina, not cebuana) to cook binignit. She is good at it now and since then she has been cooking our Good Fri meat abstinence tradition of binignit (it is food, not treat)-it is b/fast, lunch and supper. . .tho landang and saging saba not available in our place, we subs it w/ sago (landang) and plantain (saba) with some extras of canned jackfruit and vanilla. . yummy. .

  6. binignit is ginataan in tagalog, but don’t know who originally invented it. like you, we had biko the whole holy week lol, but ended up bloated.

  7. with biko, instead of ginger, we used calamansi. anyone knows the original version of biko? with coconut milk or wala?

  8. Kalami baya anang binignit ug biko oi! Sa santa cruz, zambales (Northern Luzon) ko nag holy week didto sa probinsya sa barkado sa akong amigo. Layo kaayo ang byahe (7 hours Lami man sad ang ilang biko didto unya paresan dayong ug mangga nga pwerteng tam-isa pagklami jud pero 2 days lang mi didto kay naa pa man work sa manila. Excited na ako mouli ng cebu this april 28 na. Yepey!!!! Kinsa man pwede suroyan diha sa cebu? hanggang may 08 ako sa cebu. mamista sad ko sa akong classmates sa toledo ug sa badian sa malabago lapit lang ng kawasan falls unya mangaligo sad mi didto.. hehe….. Hay, nakaka miss talaga ang yutang natawhan… miss u cebu…………

  10. Yes, binignit, biko, and puto maya are all part of our Good Friday tradition. This is because on this day Catholics should do fasting and abstinence. Fasting is eating only 1 full meal a day while abstinence is eating no meat. Since all these recipes are snacks, they are not full meals (fasting) and contain no meat (abstinence). A clever way to comply with the commandment of the church. Mga Cebu-goy.

  11. wala man siguroy gaimbento ana.gi-share lang tanan sa mga katigulangan.unya lain-laing ngan.sa tagalog,ginataan,sa bisaya outside cebu,dinuldog.anyway,ako ra pung kan un sa binignit ang landang ug nangka ra.unya sa biko ang dukot ra pud

  13. Ley, ganahan kaayo ko sa pagluto sa biko ug sa latik kay ginamitan jud ug dakong “kawa” – pangpamilya kaayo! Hahahahaha….ang mga silingan nga wala kaluto ug binignit or biko, mabahinan pa jud!
